3 squirrels 1 onion chopped fine 1 Tbs + 1 Tsp mater catsup 1 cup of mashed taters 3 Tbs breadcrumbs some beacon grease
Parboil squirrels for 20 minutes in salt water Remove the meat from the bones and grind it coarsly Combine all except grease Shape into cakes and brown in the grease......it just get no better

That sounds good , but the only time I had squirrel it was rubbery and had a strong like wild taste to it , I don't know if that was normal or if they didn't know how to fix it properly , because I have been told if someone doesn't know how to properly cook wild meat it just isn't right and some people may or may not give it a second try I guess unless they knew for a fact or found out that person didnt't know how to cook it right and the next time they ran across the chance to try it if they were able to find out for a fact that person knew how to cook it right , it would make a difference , right? I hope I didn't just confuse ya on what I wrote , because I just re-read it myself and I think I even threw myself off LOL. If so I am sorry , ask me to try and clarify if ya need me to.

gs, sounds to me like you had some old(age) squirrel.....they're like chicken....the older the tuffer.....also, i soak squirrel over night in salt water. Young squirrel is great fried......old is for the cakes or dumplin's. Correct.......any game meat must be prepared properly and it's not somethin ya learn over night. Also wild game needs to "blead out" very well.....to me the gamey flavor comes from the blood. One more thing....onions are very good at takin the "gamey" flavor out of wild meat........hope i helped.
